Coffee News Joke of the Week - There was a blonde, a brunette, and a redhead, who were all stranded on an island.

One day they found a genie and he said he would grant them three wishes.

All three of them agreed that each of them would get one wish each.

The brunette said, "I wish I was home in my bed and that this never happened.", and poof her wish was granted.

The redhead said, "I wish that I was at home in my bed and this never happened.", and poof her wish was granted.

Candied Yams

 

Ingredients:
Ingredients
  2 lbs    Sweet Potatoes
2 lbs    Yams
2 lbs    Apples (Green)
6 oz    Honey
2 cups    Brown Sugar
1 lb    Marshmallows
Dash    Salt

Preparation:
  Par Boil: The sweet potatoes and yams need to be peeled, cut and Boiled till soft, 10 to 20 minutes.

Apples: The apples need to be of the sour type. I use Granny Smith apples. The tart is what makes the sweet tasty good. Wash and core the apples. Slice the apples in to rings 1/4" thick.

Yams: In a large baking dish layer apples, yams, and sweet potatoes. Make sure you start and end with apple. For example I start out with apples, then sweet potatoes, then apples, then yams, then apples, then sweet potatoes, etc. Till the dish is heaping ending with apples on the top. On top of each apple layer I sprinkle brown sugar and honey. Also on two of the layers I sprinkle a little salt.

Bake: The honey, brown sugar, and juices must cook long enough to make a thick caramel. You can cook this with your turkey if you want. I've found that it takes at least two hours to cook this dish to where the liquid is not like water in the bottom of the dish.

Topping: Ten minutes before removing from oven, place 1 lb. of large marshmallows on top of the casserole. Remove from oven when the marshmallows are brown.

Variation: Cooking time can be reduced by removing dish after baking for 30 minutes and pouring the liquid into a pan to be cooked on the stove or in a microwave until it has a thicker consistency. Then pour the thickened liquid back over the yams and return them to the oven to finish baking (approx. 10 minutes).
